The Green Olive is the fruit of the olive tree with the Latin name Olea Europaea, tree from the Oleaceae family. Organic green olive is harvested young, when the fruit has reached its final size, but before ripening and its color turns black. After receiving it at the factory, the pitted organic green olive is washed, blanched and IQF frozen.
