The organic black olive is the fruit of the olive tree with the Latin name Olea Europaea, tree from the Oleaceae family. The egg-shape of the fruit is typical and its color turns from green to black when ripe in most domestic varieties from the Mediterranean regions. After receiving these at the factory, the organic black olive is pitted, washed, blanched and then IQF frozen.
